This delicious and hearty meatball soup is perfect for fall! Don't let the simplicity fool you, this recipe makes a delicious and hearty soup! My meat-loving grandson loved it and I hope you try and enjoy it.
Makes 4-6 servings
Ingredients:
Meatballs:
1.5 lbs Ground beef,
1/3 C grated parmesan cheese,
1 egg, and seasonings (to taste), I use Redmonds Real Seasoning Salt
4 -6 C homemade bone broth (or for convenience, you could use a clean store-bought broth like Kettle and Fire)
Step 1: Prepare the meatballs
mix the ground beef with the egg, seasonings and parmesan cheese until thoroughly combined
Shape the meatballs using 1T of meat mixture per meatball.
Saute the meatballs in your cast iron skillet until browned on all sides ~5 min (they do not need to be well done at this point)
Step 2 ; Get that broth ready
I used frozen bone broth that i made myself, so:
let your bone broth thaw in the jar, to speed the process you can let your jars of bone broth sit in warm water until they loosen up from the jar and then add it to the pot
*If you are using a clean prepared broth add it to your pot
Let your bone broth come to a simmer
Step 3. Combine the meat and broth
Add the meatballs to the broth and let it simmer until the meatballs are cooked through ~10 minutes
Step 4: Serve
Place into a serving bowl and then, Eat and enjoy!
